Recipe: Wild Garlic Sardine Gnocchi


I’m jumping on the sardine hype and making it seasonal with a wild garlic sardine gnocchi. This nourishing and hearty dish is extremely versatile – you can mix up the veggies or protein source according to what you have in the cupboard! I turn to this recipe for a quick lunch and save leftovers to take into the office the following day. It honestly feels like a hug in a bowl!

Ingredients (Serves 2)

·       1 pack of Mr Organic Gnocchi (or another gnocchi of choice)

·       1 jar of Mr Organic Olive Pesto

·       1 tin of sardines in olive oil

·       1 tablespoon of capers

·       1 handful of finely chopped cavalo nero or kale

·       Handful of wild garlic (or herb of choice) finely chopped

·       Thumb-size cube of feta (optional)

·       Black pepper, to taste


Method

1.      Bring a large saucepan of water to the boil

2.      Add the cavalo nero or kale to the pan and simmer for 2 minutes

3.      Add the gnocchi to the same pan and cook until they rise to the top (about 2 minutes)

4.      Drain the gnocchi and greens well then return to a very low heat

5.      Add the jar of pesto and wild garlic and mix well

6.      Add the tin of sardines and gently break up into large chunks

7.      Add the capers and seasoning and stir well

8.      Serve with optional crumbled feta

 

Top Tips

·       Save the second portion for lunch the following day – just warm through in the microwave

·       Opt for sardines with bones in for extra nutritional punch

·       Switch up the veggies for frozen spinach, or swap the sardines for prawns or chicken breast
